Our chef Andrea uses a variety of wonderful herbs (parsley, oregano, thyme and fennel seed) to make this sauce. With or without meat, this sauce has the potential for you to make it your own, adding any other ingredients you want, like mushrooms. The longer you leave this dish cooking, the more intense the flavour becomes and no matter what, grated parmesan on top is a must.
